Avocado wraps

This recipe is great…and really you can’t go wrong. Add any veggies that you like or an assortment of sprouts.

1/2 tomatoe diced
1/4 cucumber diced
1/2 tsp chili powder

4 tortillas (spelt or kamut – if possible)
or you may substitute big lettuce leaves.

1 cup bean sprouts
1/2 cup grated carrot
sprig of fresh parsley

3 avocados
1 tsp garlic powder (or 2 finely diced garlic cloves)
squeeze of 1/2 lemon and/or lime
1/4 cup fresh cilantro finely diced

* Combine the cucumber, tomatoe and chili powder in a bowl, and set aside.
* To make guacamole, remove the skin and pit, mash the avocado with a fork (or in a food processor if you prefer a smooth texture), mix in the garlic, lemon/lime and cilantro
* Warm tortillas in the oven (keep watch that they don’t harden, as this will make them difficult to roll)
* To arrange wraps, remove tortillas from oven , spread a thick layer of avocado down the center of each, top with some of the cucumber mix, grated carrot, parsley and a generous amount of bean sprouts. To roll tortilla, begin with a small fold along the bottom, then roll across from one side to the other tucking filling in as you go.

Makes 4 wraps
